Local flavours : The recipes at our kitchen are invariably taken from the food habits and styles of the local communities. They also use many ingredients that come from nearby villages as well as that which is grown in our own farm. Needles to say, this devotion to the local gives birth to a cuisine that is as unique and earthy as it is delicious and wholesome.
Rain water goes a long way : Fresh water is a scarce resource in this region and we have taken to rain water harvesting to make us self-sufficient and lessen the burden upon the local water tables. The system is designed as a lake and consists of three big reservoirs that can hold up to 18 million litres of water. This water, which is collected during the monsoon months, forms the only source of water to meet all our needs, including the water that you drink, which is specially treated and purified. There are several species of fish in the rain water lake that keep it clean naturally.
A Helping Hand : We have instituted many community programmes that support the local schools and guide self-help groups towards more gainful small enterprises.
Our local family : A large number of the team members that manage the resort come from the local communities in and around Gokarna. It is a bond that goes beyond employment, becoming a give and take of wisdom, inspiration and a sharing of perspectives.
Earth centered : We are as dedicated to the wellbeing of our environment as we are to yours. We treat and re-use our waste water for the gardens, flowers beds and farm at SwaSwara. Kitchen waste is turned into bio gas used for cooking and also to make organic fertilizers for the farm. The process of vermicomposting that we employ turns dry leaves and organic waste into quality fertilizer that helps to restore the lost nutrients in our soil. Not only do we practice these ecologically sound tenets, we work on spreading awareness about them in the local communities.
